There's nothing quite like a whitebait fritter drizzled with lemon juice and slapped between two slices of fresh bread.  According to the "experts" there's really only one way to cook a decent whitebait fritter:

 

 

  • Fresh whitebait: the more the merrier

 

  • 1-2 beaten eggs depending on the number of whitebait 

 

  • Salt and pepper

 

  • Butter

 

  • Fresh bread

 

  • Lemon wedges
     

Stir the whitebait into the egg/salt and pepper mix. Melt a tsp of butter in a hot pan and pour in mixture. Cook for a couple of minutes until the whitebait start to change colour - flip the fritter and cook a further minute until golden brown. 

 

Serve with lemon wedges, fresh bread and butter.

 

Chopped parsley can be added to the mixture to extend the amount of whitebait.

Mokau River Cruises

Mokau River Cruises takes you up the Mokau River on a three-hour excursion in an historic cream boat - Cygnet. During the summer months, the cruises depart twice daily at 11am and 3pm, and visit the beautiful Mackford Cottage Garden and Weaving Studio. As the self-proclaimed "Whitebait capital of New Zealand", you can also sample this delicacy at the Whitebait Inn in Mokau.
